This salad is light and refreshing and packed with nutrition! Serve at picnics, barbecues, or as a side dish with your favorite sandwich, grilled creations, or soup. Substitute this salad for the usual baked beans. With less sugar, and more protein, fiber, vitamin C, vitamin K, and healthy fats, it is sure to impress.
3 medium apples, cored and chopped (I like a combination of sweet and tart eg. Pink Lady and Granny Smith)
2 ripe avocados, peeled and seeded then chopped
1 cup pitted olives (I like the combination of purple, green, black)
3 cups of your favorite beans (I like a combination of Great Northern, Lima, and Garbanzo)
3/4 cup fresh parsley, chopped
1/2 cup finely chopped red onion
1/4 cup apple cider vinegar
1/3 cup +1 tablespoon extra virgin olive oil
juice of one large lemon
1 tablespoon whole-grain mustard
salt and pepper, to taste
Toss together avocado, olives, beans, parsley and red onion in large bowl. In a small bowl or measuring cup, combine vinegar, olive oil, lemon juice, mustard. Pour dressing over salad and season with salt and pepper to taste. Refrigerate until served. Makes 6 Servings as a side dish.
