Apple Bean Salad with Apple Mustard Vinaigrette

Ingredients
- 3 medium apples , cored and chopped (I like a combination of sweet and tart eg. Pink Lady and Granny Smith)
- 2 ripe avocados , peeled and seeded then chopped
- 1 cup pitted olives (I like the combination of purple, green, black)
- 3 cups your favorite beans (I like a combination of Great Northern, Lima, and Garbanzo)
- 3/4 cup fresh parsley , chopped
- 1/2 cup finely chopped red onion
- 1/4 cup apple cider vinegar
- 1/3 cup +1 tablespoon extra virgin olive oil
- Juice of one large lemon
- 1 tablespoon whole-grain mustard
- Salt and pepper , to taste
Instructions
- Toss together avocado, olives, beans, parsley and red onion in large bowl.
- In a small bowl or measuring cup, combine vinegar, olive oil, lemon juice, mustard.
- Pour dressing over salad and season with salt and pepper to taste.
- Refrigerate until served.
- Makes 6 Servings as a side dish.
