Beaming Beet Applesauce

This applesauce-spinoff is a great way to pack some extra nutrition into an easy-to-eat snack or side. This puree will be devoured in as little time as it takes to throw together.

  • 2 cups unsweetened applesauce
  • 1 beetroot, roasted and cubed
  • 1/2 cup blueberries
  • 1/2 tsp. cinnamon
  • 1/3 cup spinach leaves
  • Dash of salt


  • To prepare the beet: Remove beet leaves. Rinse and dry. Wrap whole beet in foil and roast on a baking pan for 35-50 minutes, or until easily pierced with a fork. Cool until you can handle and remove skin with the foil as you.
    Add all ingredients to a blender and puree until smooth.
