This Beaming Beet Applesauce is a great way to pack some extra nutrition into an easy-to-eat snack or side. This puree will be devoured in as little time as it takes to throw together. You can easily swap the blueberries in this Beaming Beet Applesauce with strawberries, raspberries or a combination of the three.
Beaming Beet Applesauce
- 2 cups unsweetened applesauce
- 1 beetroot , roasted and cubed
- 1/2 cup blueberries
- 1/2 teaspoon cinnamon
- 1/3 cup spinach leaves
- Dash salt
- Remove beet leaves. Rinse beet and dry. Wrap whole beet in foil and roast at 375° on a baking pan for 35-50 minutes, or until easily pierced with a fork. Cool until you can handle and remove skin with the foil.
- Add all ingredients to a blender or food processor and puree until smooth.
