- 1 whole wheat flatbread or pita
- 2 Eggs , pictured here -medium boiled, but over-medium would be tasty too!
- 1 tablespoon dijon mustard or hummus
- Your preferred raw or cooked veggies
- Prepare eggs according to preference.
- Toast bread if desired.
- Spread with dijon or hummus then top with eggs and veggies.
- Pictured here – steamed asparagus. To prepare: chop and steam in microwave-safe dish, covered for 2 minutes.
