Mix and match your favorite toppings for a fun and satisfying breakfast (or lunch!). Great way to sneak in some veggies to start your day right. Plenty of fiber and protein will keep you full until lunch!
- 1 whole wheat flatbread or pita
- 2 Eggs pictured here- boiled, but over-medium would be tasty too!
- 1 Tbsp of dijon mustard or hummus
- Your preferred raw or cooked veggies pictured here – steamed asparagus – to prepare: chop and steam in microwave-safe dish, covered for 2 minutes
- Other ideas: top with cherry tomatoes peppers, onions, chopped basil , chives or other
- Prepare eggs according to preference.
- Toast bread if desired.
- Spread with dijon or hummus then top with eggs and veggies. Enjoy!
