Tilapia is a soft, white, delicate fish. Each bite of this dish practically melts in your mouth. If desired, thinly slice onions and bell pepper and throw on top of fish before drizzling with olive oil. Serve with your favorite whole-grain such as brown rice or quinoa. Or, get creative and slice up fish and create Cajun fish tacos. Top with sliced onions, peppers, and diced tomato with a dollop of low-plain Greek yogurt.
4 tilapia filets (roughly 4-6 ounces each)
1 large lemon
2 teaspoons ground paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
1 tablespoon olive oil
Prepare a 13 x 9 in baking dish with nonstick cooking spray. Preheat oven to 375° F. Place fillets in baking dish. Stir spices together and sprinkle evenly on both sides of fish fillets. Squeeze fresh lemon juice on top then drizzle evenly with olive oil. Bake in oven for 15 to 20 minutes or until fish is cooked through and flakes easily with fork.
