Chickpea Salad Sandwich

This moist and satisfying wrap makes for an easy switch for your traditional mayo-based salad sandwiches. Enjoy in a whole wheat wrap or overtop a salad.

Ingredients
  

For Chickpea Salad

  • 1 can chickpeas , rinsed and drained
  • 1/2 large carrot , shredded
  • 1/4 of a large onion , chopped
  • 1/2 of an avocado
  • 1 Tbsp dijon mustard
  • 1 Tbsp lemon juice
  • 1 Tbsp tahini
  • 1/4 tsp. hot sauce , optional
  • 1/4 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano
  • 1 handful fresh cilantro leaves

Wrap Assembly

  • 3 Tbsp dijon mustard
  • 6 whole wheat wraps
  • lettuce, tomato, red onion , optional

Instructions
 

  • Add all chickpea salad ingredients to a food processor. Pulse until a choppy texture.
    Spread each wrap with 1 1/2 teaspoons of dijon mustard. Layer with lettuce, tomato and red onion, followed by a scoop of chickpea salad.
