These Cocoa Chia Bars are an excellent breakfast treat or mid-day snack and come together in a snap. Perfect amount of sweet and chocolate with healthy fats and protein from the nuts, seeds and tahini. Feel free to sub your favorite nuts or seeds or add a scoop of protein powder to take the protein up a notch. Use gluten-free oats for gluten-free option if needed.
Cocoa Chia Bars
- 1 cup rolled oats
- 1/4 cup unsweetened shredded coconut
- 1/4 cup almonds
- 2 Tbsp cocoa powder
- 1/3 cup tahini , microwaved 15 seconds
- 2 Tbsp chia seeds
- 3 Tbsp maple syrup
- couple dashes sea salt
- Add oats, coconut, cocoa and almonds to a food processor. Pulse 4-5 times to break up into finer pieces. Add to bowl. Fold in tahini, seeds, maple syrup and salt.
- Press into an 8 x 8 baking dish. Freeze 15-20 minutes, until set. Cut into bars.
