Curried Chickpea Street Wraps
These fun and tasty Curried Chickpea Street Wraps can be whipped up in a jiffy. Can easily take the place of your weekly tuna or chicken salad.
Ingredients
- 10 Whole wheat wraps
For Chickpea Salad:
- 3 cans chickpeas , rinsed and drained
- 1 large sweet potato , microwaved (~6 minutes) or until pierced easily with fork
- 1 jalapeno , finely diced
- 1/3 large onion , chopped
- 2 stalks celery , chopped
- 1/3 bunch cilantro leaves , stems removed
- 1 1/2 tablespoons curry powder
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves
- 2 teaspoons paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Juice of 1 1/2 fresh limes
For Tahini Sauce:
- 1/3 cup tahini
- 1 large lemon , juiced
- 2/3 bunch cilantro leaves (remainder of above), stems removed
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1-1 1/2 teaspoons siracha , to taste
- Salt and pepper , to taste
Optional Toppings:
- Sliced red onion
- Lettuce or spinach
- Sliced peppers
- Diced tomatoes
Instructions
- In a medium bowl, stir together ingredients for chickpea salad and mash partially (40-50% of the way) with a fork or potato masher.
- Add all sauce ingredients to a food processor, blender, or single serve smoothie cup and pulse until smooth.
- Layer your wrap with chickpea salad and desired toppings.
- Drizzle with tahini sauce before rolling and serving.
