This Golden Butternut Chili is kind of a cross between a soup, stew and chili. The spices delicately compliment the veggies and beans.
Ingredients
- 3 stalks celery , chopped
- 1 large onion , chopped
- 2 cloves garlic , minced
- 1 1/2 cups cubed butternut squash
- 1 cup chopped carrot
- 1 red bell pepper , chopped
- 1 broccoli crown , chopped
- 1 zucchini , chopped
- 4 cups veggie broth
- 1 can diced tomatoes , drained
- 2 tsp ground turmeric
- 2 tsp paprika
- 1/2 tsp cumin
- 1/2-1 tsp chili powder , adjust per spice preference
- 1/4 tsp pumpkin pie spice
- 1 can kidney beans , rinsed and drained
- 1 can pinto beans , rinsed and drained
- 3 cups chopped kale , large stems removed
- 1 cup cilantro leaves
- 1 tsp brown sugar
- 2 tsp red wine vinegar
Instructions
- Add all ingredients leading up to, but not including, kale to large soup pot. Bring to boil. Reduce heat and simmer, covered, 25 minutes or until veggies are fork tender. Stir in remaining ingredients.
