8 large carrots, peeled, rinsed, ends trimmed off
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon brown sugar
1 teaspoon lemon juice
Preheat oven to 350°F. Line cookie sheet with aluminum foil and spray with nonstick cooking spray. Halve carrots lengthwise and spread in an even layer on cookie sheet. Whisk together remaining ingredients until combined. Pour over carrots. Cover and Bake until carrots are fork-tender, about 30- 40 minutes, turning once midway through cooking.
