This Kale Ricotta Pesto Pasta is a spin off of a regular pesto highlighting lemon, kale and creamy ricotta. Sub your favorite pasta and veggies.
Ingredients
- 1/2 Recipe for Kale Ricotta Pesto
- 1 pound tri-color bowtie pasta
- 1 yellow squash , sliced
- 1 zucchini , sliced
Instructions
- Prepare pasta according to package directions. Add squash slices to pot of boiling water during last 3 minutes of cooking. Drain well. Toss with 1/2 prepared Kale Ricotta Pesto. Freeze other half of sauce for another meal or use as dip for veggies.
