Ingredients
  

  • 1/2 cup dry barley
  • 1 can garbanzo beans , rinsed and drained
  • 1 1/2 Tbsp olive oil
  • 2 cloves garlic
  • 1 onion , chopped
  • 1 broccoli crown , chopped
  • 1 yellow squash , sliced
  • 1 green pepper , chopped
  • 1/2 cup frozen green beans
  • 1 fresh lemon , juiced
  • 1 Tbsp dijon mustard
  • 2 tsp balsamic vinegar
  • 1 tsp rosemary leaves
  • 1/2 tsp ground thyme
  • 1/4 tsp dried dill
  • 1 tsp oregano

Instructions
 

  • Prepare barley according to package instructions.
  • Heat oil over medium heat. Saute onion for 3-5 minutes. Add remaining vegetables and saute 3 minutes until tender.
  • Stir barley, chickpeas, veggies and remaining ingredients until combined.
