This Mediterranean Barley and Beans is a veggie-liscious, Mediterranean take on rice and beans. Traditional Mediterranean spices with the heartiness of barley and freshness of lemon.
Ingredients
- 1/2 cup dry barley
- 1 can garbanzo beans , rinsed and drained
- 1 1/2 Tbsp olive oil
- 2 cloves garlic
- 1 onion , chopped
- 1 broccoli crown , chopped
- 1 yellow squash , sliced
- 1 green pepper , chopped
- 1/2 cup frozen green beans
- 1 fresh lemon , juiced
- 1 Tbsp dijon mustard
- 2 tsp balsamic vinegar
- 1 tsp rosemary leaves
- 1/2 tsp ground thyme
- 1/4 tsp dried dill
- 1 tsp oregano
Instructions
- Prepare barley according to package instructions.
- Heat oil over medium heat. Saute onion for 3-5 minutes. Add remaining vegetables and saute 3 minutes until tender.
- Stir barley, chickpeas, veggies and remaining ingredients until combined.
