Ingredients
  

  • 1/2 sugar pie pumpkin , peeled, seeded, and cubed (or sub cubed butternut squash or 2 cubed sweet potatoes)
  • 1 onion , chopped
  • 2 cloves garlic , minced
  • 1/4 cup tomato paste
  • 2 bell peppers , chopped
  • 2 stalks celery , chopped
  • 1 cup pumpkin lager
  • 3 cups vegetable broth
  • 1 can black beans , rinsed and drained
  • 1 can kidney beans , rinsed and drained
  • 2 teaspoons chili powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 tablespoons brown sugar
  • 2/3 cup quinoa
  • 2 crowns broccoli , chopped

Instructions
 

  • Add all ingredients to slow cooker.
  • Cook on low for 6 hours.
