These Samosa Wraps are everything you love about Indian samosas infused with some extra tangy and crunchy add-ins for a refreshing, healthier spin on a favorite fried treat.
Ingredients
- 2 Idaho potatoes , cubed
- 1 can chickpeas , rinsed and drained
- 1/4 cup tahini
- 1/3 cup fresh cilantro , chopped
- 1 lemon , juiced
- 2 tsp curry powder
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/4 cup chopped red onion
- 1/4 cup finely chopped carrots
- 1 stalk of celery , chopped
- 1 tsp minced ginger
- 2 cloves garlic , minced
- 2 Tbsp chopped radishes
- 1/3 cup chopped tomato
- 1 Tbsp yellow mustard
- salt or hot sauce , to taste
- 7 whole wheat wraps
Instructions
- Boil potatoes for 8-10 minutes or until tender. Run under cold water and drain. Add to a large bowl. Fold in remaining ingredients until incorporated, being careful not to mash potatoes. Lightly salt or add dash of hot sauce if desired.
- Fill center of each wrap and roll tightly, folding ends in to prevent spill. Toast wraps on both sides if desired and serve with a side salad.
