Ingredients
  

  • 2 Idaho potatoes , cubed
  • 1 can chickpeas , rinsed and drained
  • 1/4 cup tahini
  • 1/3 cup fresh cilantro , chopped
  • 1 lemon , juiced
  • 2 tsp curry powder
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/4 cup chopped red onion
  • 1/4 cup finely chopped carrots
  • 1 stalk of celery , chopped
  • 1 tsp minced ginger
  • 2 cloves garlic , minced
  • 2 Tbsp chopped radishes
  • 1/3 cup chopped tomato
  • 1 Tbsp yellow mustard
  • salt or hot sauce , to taste
  • 7 whole wheat wraps

Instructions
 

  • Boil potatoes for 8-10 minutes or until tender. Run under cold water and drain. Add to a large bowl. Fold in remaining ingredients until incorporated, being careful not to mash potatoes. Lightly salt or add dash of hot sauce if desired.
  • Fill center of each wrap and roll tightly, folding ends in to prevent spill. Toast wraps on both sides if desired and serve with a side salad.
