Sesame Ginger Salmon


4 salmon fillets (4-6 oz.)
2 tablespoons brown sugar
1 cup orange juice
1 Tbsp. sesame oil
1 Tbsp. soy sauce
2 Tbsp. rice vinegar
2 inch ginger root, peeled and minced
1/4  teaspoon red pepper flakes, or to taste


Place salmon in gallon storage bag. Combine remaining ingredients and pour over salmon. Close bag and gently shake to distribute. Marinate salmon in refrigerator for at least 30 minutes and up to 2 hours. Preheat oven to 400°F. Coat oven-safe baking dish with foil and spray with nonstick cooking spray. Place salmon in baking dish and pour marinade over top. Bake for 15-20 minutes or until fish flakes easily. Salmon is pictured here with whole wheat couscous and steamed mixed vegetables.
