Cucumber Dill Watermelon Salad

For Dressing

avocado
, pitted and peeled

0% plain Greek yogurt
juice of 1 lime

chopped cucumber
1/2
teaspoon
lime zest

garlic

fresh dill
Salt and black pepper
, to taste

, to reach desired consistency
Instructions
Toss together greens, bell pepper, onion, cucumber, watermelon, and sunflower seeds in a large bowl.
In food processor, combine all dressing ingredients.
Slowly blend in water, 1 tablespoon at a time, until desired consistency is reached.
Coat salad evenly with dressing and serve.
Notes
To make a complete meal, top with grilled shrimp, salmon, tofu or chicken breast.
